My Best Banana- Peanut Butter Bread February 25, 2013

Ingredients:

1 3/4 c flour

1-1 1/2 cup sugar (depending on how sweet you like it)

1 tbsp baking soda

1/2 tsp salt

3 large very ripe bananas, mashed ( I use a potato masher)

2 eggs

1/4 c peanut butter

1/2 c crisco shortening

1/4 c sour cream

cooking spray

Using two bowls, mix wet ingredients in one bowl, dry ingredients in the other bowl.  Add dry to wet a little at a time to make sure all is combined well.  While all ingredients should be well combined, I like to leave my bananas a little chunky.

Preheat oven to 350 degrees.  Pour batter into greased loaf pan.  Bake at 350 for 50 minutes to an hour or until a knife inserted comes out clean.  Let cool on baking rack, slice and enjoy!

What to do with leftover chili? Mexican Lasagna!!!!!! February 20, 2013

I love leftovers!!!!! It gives me so many options for creating a new meal.  I started doing this when my children were little.  How many times in one week can you expect them to eat the same thing?

I had some leftover chili and rice so I decided to make “mexican lasagna” which my kids used to love!  It is very easy and basically, you can add whatever you like to it.  Start off with your leftover chili.

I added the leftover rice to the chili and mixed it well.  I like to use rice to stretch the chili.  If you don’t have rice you can add a can of refried beans or just cook up a cup of rice.

I used one bag of shredded Mexican cheese and medium flour tortillas.

Before assembling this dish, I sprayed some vegetable cooking spray into a baking dish.  I then began layering just like lasagna.  First the tortillas, chili mixture, cheese….repeat.  For the top I added some chopped tomatoes (canned or fresh)  and cheese.  I covered it and baked it at 350 for about an hour.
