Unstuffed Cabbage December 2, 2012

I love stuffed cabbage but do not like all the work that goes into making it.  I have come up with a recipe the gives you the same taste but with a fraction of the work.  I hope you try it!


2lbs ground beef

1 large head of cabbage

1 medium onion, chopped

1 large can of crushed or pureed tomatoes

1 box of brown sugar

1/2 c uncooked rice for every pound of meat

2 eggs

plain bread crum

pinch of pepper


To begin:

Add pepper and chopped onion to the bottom of a large, heavy pot.  Add your quartered cabbage and enough water to come up about one third of the way to top of pot.  Let it come to a simmer.

Meanwhile, to make your meatballs, mix chopped meat, 2 eggs , rice , pinch of pepper and enough plain bread crumbs to hold meat together.  form into meatballs.

When water begins to simmer, add meatballs on top of cabbage.  Cover and simmer till cooked through, about 20 minutes.

Add canned tomatoes, stir to combine and cook on a low fire for 1 hour.

Add 1/2 box of brown sugar and continue cooking on low, tasting to see if you need more sugar.

In total, this should cook at least 3 hours.  You may add a squeeze of lemon juice if you like, of some golden raisins.

Serve over rice or mashed potatoes.
