This is a very delicious dish that is great to make on cool Fall days!!!!
1 box pasta ( I use small shells or campanelle)
1 lb italian sausage, removed from casing
1 bunch brocoli rabe, washed and trimmed
1 small onion, chopped
2-3 cloves of garlic, chopped
1/4 cup marinated red pepper strips or 1 small red pepper chopped
1 tsp dried basil
1 tsp dried oregano
crushed red pepper flakes, to taste
In a large skillet heat some olive oil. When hot, add sausage(breaking it up) and onion. when sausage is cooked, add your garlic and herbs. use as much crushed red pepper flakes as you like depending on the “heat” you want.
Next, add your brocoli rabe. Make sure it is thoroughly washed. Add about a cup of water and cover pot letting the brocoli rabe cook down.
While this is cooking start making your pasta.
Check and stir your sausage/brocoli rabe while pasta is cooking. Taste and adjust your seasonings if needed.
When pasta is ready, before you drain it, reserve about a cup of pasta water.
Drain your pasta and return it to the pot. Pour sausage/brocoli rabe over pasta. If it is too dry, add some reserved pasta water.
Place in serving dish and add some grated parmesan cheese.
Any leftovers can be heated in a microwave and it tastes delicious!
