Orange-Rosemary Chicken (slow cooker) May 12, 2012

Here is a delicious slow cooker recipe that I have made many times.  I don’t remember where I found it, but it is definitely worth trying!


3-4 lb. chicken

2/3 c chicken broth

2 oranges quartered and divided

1 medium onion, quartered

4 tbsp butter, softened

2 oranges, zested

2 tbsp rosemary, finely chopped

1 tsp kosher salt

1/2 tsp ground pepper

1/4 c orange marmalade

1 head of garlic

In bottom of slow cooker add chicken broth, 4 orange quarters and onion.

In small mixing bowl, stir together butter, orange zest, rosemary, salt, pepper and marmalade.

Clean and rinse chicken, pat dry and liberally salt and pepper the cavity.

Place remaining orange quarters, rosemary sprigs and garlic inside cavity(you don’t have to peel garlic).

Loosen skin from chicken and rub half of butter mixture under skin.

Rub remaining butter on outside of chicken.

Place chicken on top of orange and onion.

Add broth.

Cook on low 8-10 hours.

Serve with rice or orzo and a salad.
