This is a very easy one-pot dinner that is quick and yummy! Most of the ingredients you should already have in your pantry. The time it takes from start to finish is only a couple of minutes longer than it takes to make a pound of pasta!
Even though it is a pasta dish, it is not as heavy as one with a red or cream sauce. Served as an accompaniment to meat or poultry, or as the meal itself with a salad, this is one of my “go to” meals when I don’t really feel like cooking!
1lb pasta (sometimes I use linguini, sometimes farfalle. It si up to you)
1 bunch of broccoli-just the florets
2 cloves of garlic, minced
crushed red pepper flakes to your taste
Freshly grated parmesan or romano cheese
Following the directions on the pasta box, boil your water, salting it when it just comes to a boil.
While pasta is cooking, mince your garlic and get your broccoli ready.
Five minutes before pasta is done, add your broccoli to the pot.
Reserve about one cup of the pasta water.
Drain pasta and broccoli in colander.
Using the same pot as before, heat enough olive oil to cover bottom of pot. Add your garlic and pepper flakes being careful that the garlic does not burn.
When your garlic is just turning light brown, add your pasta and broccoli to the pot. Turn off the heat.
Toss everything in the pot. If it is too dry and the pasta clumps together add some reserved liquid a little at a time until it is how you like.
Before you serve, add your grated cheese.
